
If you’re looking for an easy, unique, and delicious hors d’oeuvre to make for a Christmas party this is the recipe for you! I got this recipe idea from Aaron after he ordered a similar dish while at brunch. He enjoyed them so much I wanted to try to make them at home, and see if I could measure up!

Preheat oven to 400℉
If the dates aren’t already pitted, remove the seed from the date by slicing the date lengthwise.

Remove chorizo from the casing and stuff the empty date with chorizo. I was a bit heavy-handed with the amount of chorizo but in the end it comes down to personal preference; add as much or as little as you like.

Take a few slices of beacon out of the package and cut strips in half. Wrap the sliced beacon around the stuffed date and secure with a toothpick.
Sauté the wrapped dates in a pan with high sides, I used my lodge cast-iron skillet, for 10 minutes or until brown around the edges.
Remove pan from stove top (with the dates still in it) and place in a 400℉ oven for 10 -15 minutes.

Serve hot on you favorite decorative platter.
